Beth holds a Bachelor's in biology & secondary education, a Master's in nutrition, and is a registered dietitian. She writes articles about food, health and nutrition for magazines and websites such as ParentLife, Smart and CBN.com and is the wellness columnist for Living Light News, a Canadian newspaper. Overall, Beth has written 240+ articles and numerous devotionals for publication.
Beth's first two children's books, In My Bath and A Wish and a Prayer, released in 2010 from 4RV Publishing. A third book, Carla's Cloud Catastrophe, came out in summer 2011. Beth also has six nonfiction children's books in the pipeline for 2013.
She also wrote two 30-day devotional books for women -Fruit Lovers' Devotions to Go and Race Fans' Devotions to Go.
Beth's is a columnist for racing blog Skirts and Scuffs , member of the NASCAR Citizen Journalists Media Corps. Her "Faith on the Frontstretch" column highlights the role of faith in motorsports. In "Gibbs Garage" pieces, she recapped each 2012 Sprint Cup race for Joe Gibbs Racing teams. She also interviews NASCAR insiders and serves as an editor and media representative for Skirts and Scuffs.
In snippets of spare time, Beth enjoys reading, baking, and watching NASCAR and football. Her professional affiliations include the Society of Children's Book Writers and Illustrators and the Academy of Nutrition and Dietetics.
